1. Avocado Toast
For a tasty avocado toast worthy of breakfast or dinner, try this savory combo. Arrange avocado slices over toasted bread. Then add arugula, lightly dressed in lemon juice and olive oil. Top with a fried egg, then season with salt, freshly ground pepper and crushed red pepper flakes.
2. Chicken Salad
Swap mayo with mashed avocado in your favorite chicken salad recipe. You could even add a sprinkling of everything bagel seasoning to mix it up. Need a fun bite for a gathering? Make your chicken salad recipe as usual (mayo included), and place a scoop or two inside a pitted avocado half — and voilà, chicken salad boats.
3. Dessert Dip
Ripe avocados pack healthy fats and extra creaminess into this easy dip. Simply blend 2 peeled and pitted ripe avocados, ½ cup pure maple syrup, ⅔ cup unsweetened cocoa powder, 2 teaspoons vanilla extract, 2 tablespoons preferred milk and a pinch of salt. Serve with fresh fruits and pretzels.
