  • 1 lb. boneless pork loin, cut into ¾” cubes
  • 2 Tbsp. taco seasoning
  • 2 tsp. vegetable oil
  • 8 oz. chunky salsa
  • 1/3 cup peach preserves
  • Rice (optional)

Recipe Ingredients:

  • 1 lb. boneless pork loin, cut into ¾” cubes
  • 2 Tbsp. taco seasoning
  • 2 tsp. vegetable oil
  • 8 oz. chunky salsa

Recipe Directions:

  1. Coat pork cubes with taco seasoning.
  2. Heat oil in large nonstick skillet over medium-high heat; add pork and cook to brown, stirring occasionally.
  3. Add salsa and preserves to pan, lower heat, cover and simmer for 15-20 minutes. Serve over rice, if desired.

Stuffed Italian Tenderloin with Cream Cheese

This easy-to-make pork dish brings BIG flavor to the dinner table.
Stuffed Italian Tenderloin with Cream Cheese

Recipe Ingredients:

  • 1 (24 oz.) pork tenderloin
  • 1 Tbsp. Italian seasoning
  • 4 oz. cream cheese, reduced fat
  • ¼ cup sun dried tomatoes (oil-packed, julienned, drained and chopped)
  • ¼ cup Parmesan cheese
  • ½ cup fresh baby spinach leaves
  • 1 Tbsp. Fresh thyme
  • Salt, to taste
  • Pepper, to taste

Stuffed Italian Tenderloin with Cream Cheese

Recipe Ingredients:

  • 1 (24 oz.) pork tenderloin
  • 1 Tbsp. Italian seasoning
  • 4 oz. cream cheese, reduced fat
  • ¼ cup sun dried tomatoes (oil-packed, julienned, drained and chopped)
  • ¼ cup Parmesan cheese
  • ½ cup fresh baby spinach leaves
  • 1 Tbsp. Fresh thyme
  • Salt, to taste
  • Pepper, to taste

Recipe Directions

  1. Heat oven to 425°F. Cut each pork tenderloin lengthwise, cutting mostly to the other side but not all the way through. Lay plastic wrap over the top and pound with a meat tenderizer until ½” thick.
  2. Sprinkle Italian seasoning over entire tenderloin. On half of the pork loin (lengthwise), spread the cream cheese. Place sun dried tomatoes across the cream cheese, sprinkle on Parmesan, and top with spinach leaves. To prevent over-stuffing, only place these ingredients on half of the loin.
  3. Lengthwise, starting from the cream cheese-filled side, roll the pork loin up and secure with 3-4 strands of kitchen twine.
  4. Place rolled loin seam-side up on an edged baking sheet lined with foil. On top of the rolled loin, sprinkle fresh thyme, salt and pepper.
  5. Roast tenderloins, uncovered, for 25-30 minutes until internal temperature is 145°F. Rest for three minutes and remove twine. Slice pork tenderloin into 1” thick pieces and serve.

  • 1/2 onion (chopped)
  • 14.5 ounces chicken broth
  • 15 ounces chopped tomatoes (Mexican-style)
  • 15 ounces pinto beans (drained and rinsed)
  • 2 teaspoons chili powder

  • 4 porterhouse bone-in loin pork chops, about ¾” thick
  • 2 Tbsp. olive oil
  • 1½ tsp. ground chipotle chile
  • 1½ tsp. coarse salt
  • Zest of 1 large orange
  • 2 tsp. garlic, minced
  • ⅓ cup honey

  • 4 porterhouse bone-in loin pork chops, about ¾” thick
  • 2 Tbsp. olive oil
  • 1½ tsp. ground chipotle chile
  • 1½ tsp. coarse salt
  • Zest of 1 large orange
  • 2 tsp. garlic, minced
  • ⅓ cup honey

Recipe Directions

  1. In a small bowl, stir together oil, ground chipotle, salt, orange zest and garlic into a paste.
  2. Using a rubber spatula, spread chipotle mixture over both sides of pork. Let stand for 15-30 minutes.
  3. Heat grill to medium-hot. Place chops on grill and close lid.
  4. Grill over direct heat, turning once, about 4-5 minutes per side, until the internal temperature of the pork reaches between 145°F (medium-rare) and 160°F (medium) on a meat thermometer.
  5. During the last 2 minutes, brush chops on both sides with honey.
  6. Remove from grill and let rest for 3 minutes.
