Named after the town of Cotija, Michoacán in Western Mexico, our Cotija cheese has a robust, aged, salty flavor with a famously crumbly and granular texture — that has made it one of Mexico’s most recognizable cheeses. It resembles the palatability of parmesan and feta cheeses. On top of that, it’s gluten-free and made with Grade "A" milk from cows not treated with rBST.
