Instant Pot® Brussels Sprouts with Dried Cranberries

- 1 pound Brussels sprouts
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup vegetable stock
- 3 cloves garlic, minced
- 1/2 cup dried cranberries
- 1/4 cup pine nuts
- Place the Brussels sprouts in pot. Season with salt and pepper, then add the vegetable stock, garlic and dried cranberries. Pressure cook on high pressure for 3 minutes, then quick release.
- Meanwhile, in a small skillet over medium-low heat, cook the pine nuts until golden brown.
- Place Brussels sprouts in a bowl and toss with toasted pine nuts. Serve and refrigerate leftovers.
