Instant Pot® Brussels Sprouts with Dried Cranberries

  • 1 pound Brussels sprouts
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup vegetable stock
  • 3 cloves garlic, minced
  • 1/2 cup dried cranberries
  • 1/4 cup pine nuts


  • Place the Brussels sprouts in pot. Season with salt and pepper, then add the vegetable stock, garlic and dried cranberries. Pressure cook on high pressure for 3 minutes, then quick release.
  • Meanwhile, in a small skillet over medium-low heat, cook the pine nuts until golden brown.
  • Place Brussels sprouts in a bowl and toss with toasted pine nuts. Serve and refrigerate leftovers.
