Quick Mediterranean Chili

Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 1 tablespoon fresh ginger, chopped
  • 2 cloves garlic, chopped
  • 2 carrots, peeled and chopped
  • 1 bell pepper, chopped
  • 1 can (28 oz.) Kroger® diced tomatoes
  • 1 cup Simple Truth Organic™ Low Sodium Free Range Chicken Broth
  • 1 tablespoon cumin
  • 1/2 teaspoon cayenne
  • 1 teaspoon ground cinnamon
  • 2 teaspoons paprika
  • 1 can (15 oz.) Simple Truth Organic™ Garbanzo Beans, drained
  • 3 cups kale, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup cilantro, chopped

Directions

  • In a large pot over medium high heat, cook ground beef and onion until beef is no longer pink, stirring to break the beef into crumbles. Drain any excess fat.
  • Stir in remaining ingredients. Bring to a boil. Reduce heat, cover and simmer 15 minutes or until vegetables are tender
